How It Was Made

In the making of this wine, complexity was key. It was always intended to be released aged. Cool fermentation temperatures preserving the aromatics. Sugar a gram higher than usual and generous acid integrating with the fruit becoming a luscious and fuller flavour as the wine went to bottling. The Riesling fruit from the McLaren Vale vineyard was sold this year, and a Clare Valley parcel was selected for its quality of that vintage.

A bouquet of gorgeous lifted floral, jasmin and citrus and lime, the consequent complex round creamy weighted palate follows. This wine offers pureness of fruit and zest in the persistent acid length, but complexity in the complimenting textural lush mouth feel.
