2011 Coonawarra Cabernet
Vintage 2011 was not without it’s challenges, however the cool weather resulted in a great vintage for our Coonawarra vineyard; good concentration, vibrant fruit, excellent tannin structure and wonderful elegance.
Deep red with purple hues, blackcurrant, mint and cedar on the nose reinforced on the palate with pencil box flavours and eucalyptus.
A supple, medium bodied wine with elegant aromas of red berries, violets and hints of mint. Well proportioned with generous fruit and a persistent finish.
Picked at night and in the cool of the Coonawarra Autumn, the grapes crushed in to small open pots. Hand plunging, cool preferment maceration, coupled with long post ferment maceration on skins followed the traditional techniques more readily found in Bordeaux. Once pressed the wine spent 18 months in French oak barrels after which each barrel was selected for the ﬁnished blend on its own merits.
